Объектом исследования являлись ярочки северокавказской породы мясо-шерстного направления продуктивности разных категорий упитанности: 1 группа - первой категории и 2 группа - второй согласно требованиям ГОСТ 52843-2007. В результате убоя ярочек в возрасте 12 мес. были получены экспериментальные данные об особенностях морфоструктуры мышечной, жировой и соединительной тканей отрубов туш и товарных свойств овчин ярочек разной упитанности. По всем исследуемым показателям на гистологическом уровне мяса и овчин молодняк первой категории упитанности имел превосходство над сверстниками второй, что в реализационных целях является более ценной высококачественной продукцией
The objects of the study were North Caucasian ewe lambs of meat and wool productivity direction with fatness of different categories: 1 group - the first category, and group 2 - the second category according to GOST 52843- 2007. As a result of the slaughter of young animals 12 months of age were obtained the experimental date on the characteristics of morphological structure of muscle, fat and connective tissue cuts of I st grade carcasses and product properties of sheepskins from ewe lambs of different fatness. For all the studied parameters of meat and sheepskins on the histological level the first category young had an advantage over the second category young that was just the same age, and it is realizable for a more valuable high quality products
